No-Bake Speculoos Cheesecake – the easy Christmas recipe with MOGLi Speculoos Biscuits

Imagine: It smells of cinnamon, orange, and Christmas – and in the middle of the table is a creamy no-bake speculatius cheesecake that tastes like a little winter adventure from the very first bite.
With our MOGLi organic speculaas cookies, this cake is the perfect companion for cozy afternoons with the family. The best part? You don't need an oven! In just a few steps, you can conjure up a festive highlight that will delight all ages – naturally delicious, sustainable, and full of winter magic.

This is required:

2 packs of MOGLi speculatius biscuits (250 g)
2 tsp agar agar
70g margarine
400ml (vegan) cream
2-3 packets of vanilla sugar
1 packet of cream stiffener
450g (vegan) neutral cream cheese

Here's how:

For the biscuit base, put all the biscuits (except a few for decoration) into a bag and crush them with an object until fine crumbs form.
Next, melt the margarine in a saucepan, mix the agar agar with two tablespoons of tap water, and add it. Add the cookie crumbs and mix well.
Grease the bottom of a springform pan with margarine and spread the crumb mixture evenly. Press firmly into the pan; a tablespoon is ideal for this. You can now refrigerate the biscuit base for a few minutes.
For the cheesecake topping, whip the cream or vegan cream alternative with the cream stiffener and vanilla sugar until stiff peaks form. Then gradually add the (vegan) cream cheese and mix briefly.
Spread the mixture over the biscuit base and smooth it down. Refrigerate the cake for at least one to two hours. Then decorate it with the remaining speculatius biscuits and serve.
